Pear barley is toasted and then braised slowly in rich chicken stock before being finished with sauteed leeks and lemon zest. I love the way barley holds its integrity and gives wonderful texture contrast. Try pairing with the Arctic Charr or Hazelnut chicken as a flavourful side dish.
